Three Sisters Succotash
1 medium onion chopped and sauteed
1 medium butternut squash (or your favorite winter squash) peeled and diced into 3/4 cubes.
Measure cubed squash and add equal amounts of corn and lima beans (or your favorite beans. (We usually use frozen corn and limas).
1/2 cup liquid to keep it from scorching.
Mix all vegetables together and cook until squash is tender.
A summer variation is to use summer squash pieces rather than the winter squash. To do this, combine the sauteed onion, corn and beans and cook until beans are almost done. Add the squash and continue to cook until beans are done.
